I am a Food and Beverage Trainer specialising in Food and Beverage Production. I have intense knowledge and skills in a relatively larger part of the topics now referred to units of competency in food and Beverage production both theory and practice. The units of competency include: 1. Stocks, soup and sauces 2. Eggs 3. Food Accompaniments 4. Meat cuts( Butchery) 5. Meats cookery 6. Yeast products 7. Salads and salad dressings 8. Cakes 9. Desserts 10. Sandwiches 11. Beverage All these units of competencies are assessed in both theory and practice. The competency- Based curriculum emphasizes that training should be industry aligned and hence the National Occupational Standards should be strictly adhered to in order to achieve these principles. Other key principles embodied in the new curriculum include; 1. Measurable learning outcomes 2. Assessment of learning outcomes 3. Relevant learning strategies and resources 4. Inclusive learning environment 5. Learner-centred approach 6. Reflective teaching practices To come to realization of the above mentioned principles training has to steer it's focus on hand- on- skills to trainers than just common knowledge of given courses. This is a sure way of closing the gap of unemployment amongst the youth today as they will be able to venture into various businesses and increase the entrepreneurial culture in the society.
